With all the favorites of taco night like spicy beef, enchilada sauce and lots of cheese, this fresh new dish is bound to become a household favorite. Just wait until you try them reheated!

Cook time: 40 minutes
Serves 4

Ingredients:

  • 4 large bell peppers
  • 1 lb. lean ground beef
  • 1 oz. taco seasoning
  • ½ onion, diced
  • 1 can chopped green chiles
  • ¼ cup red enchilada sauce
  • 2 cups Mexican blend shredded cheese

Directions:

    Preheat the oven to 350° and line a baking sheet with aluminum foil.

    In a medium skillet, heat ground beef over medium heat.
  • 3

    Stir in taco seasoning according to the package. Toss in onions and allow to soften.

    Stir in green chiles and enchilada sauce. Once heated through, turn off the heat.

    Cut tops off of each pepper and hollow them out, removing ribs and seeds. Place each pepper on the baking sheet.

    Fill peppers with alternating layers of beef and cheese until there is a layer of cheese right at the top of the pepper.

    Place the top back on each pepper and bake for 30-40 minutes or until the peppers are tender and the cheese is melted.

    Bonus: To reheat for an awesome extra meal, wrap in foil and bake at 350° for 10 to 15 minutes or until heated through.
