What bad day can’t be fixed with pasta? Make dinner time simple with this delicious casserole. With just a handful of ingredients and only two dishes to clean, you’ll be reaching for this recipe every time you’re in a pinch.

Serves 6

Ingredients:

  • 16 oz. penne pasta
  • 1 tsp. minced garlic
  • 16 oz. ground meat of your choice
  • 1 large onion, chopped
  • 1 tomato, diced
  • 6 oz. tomato paste
  • 1 tsp. fresh or dried basil
  • 1 tsp. fresh or dried oregano
  • 3 cups shredded part-skim mozzarella cheese

Directions:

    Preheat the oven to 350° and grease a 9x13” baking dish.

    Cook pasta according to package directions.

    Brown meat with garlic and onions in a large skillet; drain.

    Stir in tomato chunks, tomato paste, basil and oregano. Cook until heated through, stirring occasionally.

    In the prepared baking dish, combine pasta, tomato mixture and 2 cups of shredded cheese.

    Sprinkle the remaining cheese evenly on top.

    Bake for 20 to 25 minutes or until the casserole is heated all the way through and the cheese is melted.
