Serves 4
Ingredients:
- 4 cups Brussels sprouts
- 1 cup couscous, dry
- 5 slices of bacon
- ¼ cup Parmesan cheese, shaved
- 3 cloves of garlic, minced
- 2 Tb. olive oil
- 1 Tb. lemon juice
- 1 tsp. maple syrup
- 1 tsp. Dijon mustard
- Salt and pepper to taste

Cook couscous according to the package. After cooking, set aside. -

Wash Brussels sprouts and slice thinly. -

Fry bacon in a large pan. Once cooked, remove it from the pan and crumble. Leave the bacon grease in the pan, and add garlic and shredded Brussels sprouts. -

Saute the garlic and Brussels sprouts for 5 to 10 minutes or until cooked through and slightly browned. Sprinkle with salt and pepper. -

Combine olive oil, lemon juice, maple syrup, Dijon mustard, salt and pepper in a separate bowl. -

Add Brussels sprouts, couscous, bacon and Parmesan cheese to the bowl and toss.
