Ingredients:

  • 4 cod fillets
  • 3/4 lb. baby gold potatoes, quartered
  • 1 zucchini, sliced
  • 2 Tb. olive oil
  • 2 Tb. lemon juice, freshly squeezed
  • 1 lemon, sliced
  • 1 tsp. minced garlic
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 3 Tb. dill, chopped

    Preheat oven to 400°F. Coat a 9x13 baking dish with cooking spray.

    In a small mixing bowl, combine olive oil, lemon juice, garlic, salt, pepper and dill.

    Place quartered potatoes in a baking dish, cover with half of the olive oil mixture. Microwave on high for 5 minutes, and then remove from microwave.

    Place the cod and sliced zucchini in the baking dish with the potatoes. Coat with the remaining olive oil and lemon mixture. Top with lemon slices.

    Bake for 12 to 14 minutes, until the fish is fully cooked and flakes easily with a fork. Garnish with additional fresh dill and serve! (Fresh dill makes all the difference in this dish!)
