Ingredients:
- 1 ½ lbs. fresh asparagus, trimmed
- 1 ½ cups grape tomatoes, halved
- 3 Tb. pine nuts
- 3 Tb. olive oil
- 2 garlic cloves, minced
- 1 tsp. kosher salt
- ½ tsp. pepper
- 1 Tb. lemon juice
- ⅓ cup parmesan cheese, grated
- 1 tsp. lemon zest

Preheat the oven to 400ºF.

Place the asparagus, tomatoes and pine nuts on a foil-lined 15x10x1 baking pan.

Mix 2 tablespoons of oil with the garlic, salt and pepper. Toss with the vegetables to coat.

Bake for 15 to 20 minutes or until asparagus is tender. Drizzle with remaining oil and lemon juice, sprinkling with cheese and lemon zest.
