Ingredients:
Spicy Peanut Sauce:
- ¾ cup creamy peanut butter
 - 2 tsp. sesame oil
 - 3 Tb. soy sauce
 - ¼ cup rice vinegar
 - ⅓ cup water
 - Juice of 1 lime
 - 1 Tb. agave
 - 2 tsp. ginger, minced
 - 2 garlic cloves, minced
 - 1 tsp. Sriracha
 - Salt, to taste
 
Noodles:
- 2 bundles soba noodles
 - 2 cups snap peas, trimmed
 - 1 bunch scallions, thinly sliced
 - 2 Tb. white sesame seeds
 - 1 Tb. black sesame seeds
 - 3 Tb. fresh cilantro, chopped
 
Directions:
- 
				In a blender or food processor, combine ingredients for the peanut sauce and process until smooth, then set aside. If the sauce is too thick for your preference, add 1 tablespoon of water and blend again. Repeat until the sauce is your desired consistency.

				Bring a large pot of salted water to a boil over medium-high heat. Add soba noodles and cook until tender, around 5 to 6 minutes. Add snap peas and cook 30 seconds more. Drain and cool completely.

				Toss the cooled noodles and peas with the peanut sauce in a large bowl. Add scallions, sesame seeds and cilantro. Store refrigerated in an airtight container until ready to eat. Serve chilled.
