Ingredients:

  • 2.5 lbs. baby creamer potatoes
  • 1.5 lbs. smoked sausage, cut into bite-size chunks
  • 1 large onion
  • 1 green bell pepper
  •  2 Tb. olive oil
  • 2 tsp. “Slap Ya Mama” seasoning
  • 1 tsp. garlic powder
  • 1 tsp. black pepper
  • 1 tsp. red pepper flakes
  •  ½ cup butter, cut into pieces*
  • Salt and pepper, to taste

*Butter can be left out or substituted to create a dairy-free dish!

Directions:

    Preheat oven to 350°F and lightly spray a 13x9-inch baking dish with nonstick cooking spray.

    Rinse potatoes and cut each in half (should be about bite size), add them to a large bowl with olive oil and toss to coat. Add the seasonings and toss to coat again.

    Dice bell pepper and onion and add to bowl with sausage. Mix all ingredients together.

    Pour into the baking dish and spread evenly. Scatter small butter pieces on top of mixture. Cover with foil and bake for 45 to 50 minutes or until potatoes are tender.
