Ingredients:
- 4 boneless skinless chicken breasts or thighs
- 2 cups pineapple chunks (fresh is recommended, but frozen or canned will work!)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- Coarse salt and cracked black pepper, to taste
Sauce Ingredients:
- ½ cup preferred BBQ sauce
- 3 clove garlic, minced (or 2 tsp. dried garlic)
- 1½ tsp. smoked paprika
- 2 Tb. olive oil
- 1 jalapeño, sliced
- 2 Tb. fresh lemon juice
- 1 tsp. dried oregano
- Chopped cilantro, to taste

Preheat oven to 350°F. Lay out four 12x12-inch squares of aluminum foil and place pineapple chunks and bell pepper in the middle of each. Add preferred seasoning, place a piece of chicken on top of each and continue to season. -

Mix BBQ sauce, olive oil, paprika, minced garlic, lemon juice, oregano, cilantro and jalapeño in a separate bowl. Distribute and pour sauce evenly over each packet. -

Roll and fold the foil over on each pack until each is sealed, and move the packs to a baking sheet. Bake for 35 to 40 minutes. Be sure that the chicken gets cooked through. -

Once the chicken is cooked, open the packs to drizzle with more sauce and let broil for a couple minutes to crisp the chicken. -

Garnish with cilantro, and serve immediately!
