Ingredients:
- 1 ½ lbs. boneless, skinless chicken thighs
- ¼ cup fresh lemon juice
- 2 Tb. lemon zest
- 1 tsp. dried oregano
- 2 Tb. minced garlic
- ⅓ cup olive oil
- ¾ tsp. kosher salt
Directions:

Whisk together the lemon juice, lemon zest, oregano, garlic, olive oil and salt.

Cut chicken into 2-inch chunks and place in a bowl.

Pour marinade over the chicken and refrigerate covered for 30 minutes.
