Ingredients:
- 9 graham crackers
- 4 Tb. butter, room temperature
- 8 oz. cream cheese
- ½ cup 5% plain Greek yogurt
- ¼ cup honey
- 1 egg white
- 1 tsp. vanilla extract
- 1 Tb. fresh lemon juice
- 1 cup fresh blueberries

Preheat oven to 350ºF and spray an 8 x 8 inch pan with nonstick spray. -

Blend graham crackers and butter until the texture is a light crumble. -

Pour graham cracker crumbs into the pan and press into the bottom so that it is evenly spread through the whole pan. -

Bake crust for 7 minutes and remove from oven. -

Rinse blender and add in cream cheese, greek yogurt and honey. Blend together until smooth. -

Add egg white, vanilla and lemon juice and continue blending until smooth. -

Add blueberries and blend into a puree. -

Pour the mixture into pan on top of the graham cracker crust and spread over evenly. -

Bake in the oven for 25 to 30 minutes. -

When done baking, remove from the oven and let cool for 30 minutes. Chill overnight or at least 2 hours in the refrigerator before slicing and serving.
