Ingredients:

  • Vegetable oil, for grilling
  • 3 Tb. sugar
  • 1½ tsp. kosher salt
  • Zest of 1 lime
  • ¼ large watermelon (about 5 lbs.), cut into 1-inch-thick wedges
  • Fresh cilantro, for serving
  • Lime wedges, for serving

    Heat grill on high, about 450°F to 500°F. Oil the grates with vegetable oil.

    While the grill is heating, mix together the sugar, salt and lime zest in a small bowl. Separate one teaspoon of the mixture to use later.

    On a sheet, lay the watermelon wedges out in a single layer. Sprinkle the seasoning mixture on the watermelon wedges. Be sure to season both sides! Let the wedges rest on paper towels for 10 minutes before putting them on the grill. Dab excess moisture off with paper towels.

    Place the wedges on the grill and cook for 2 to 3 minutes on each side. Once grill marks appear, remove the wedges from the grill and put them on a serving platter. Sprinkle the rest of the seasoning that was set aside onto the finished wedges. Serve alongside lime wedges and other fruits if you desire!
