Ingredients:

  • 1½ cups basil leaves, finely chopped
  • 1 garlic clove, minced
  • 3 Tb. lemon juice
  • 1 Tb. rice vinegar
  • 1/3 cup + 4 Tb. extra-virgin olive oil
  • Kosher salt and ground black pepper
  • 6 oz. fresh green beans, trimmed
  • 3 peaches, pitted and halved
  • 6 oz. halloumi, sliced
  • 4 cups mixed greens
  • ½ cup pine nuts, toasted

    Use a small bowl to whisk together basil, garlic, lemon juice, rice vinegar, 1/3 cup of olive oil, salt and pepper to taste. Whisk until thoroughly combined.

    Over high heat, boil a medium pot of salted water. Add green beans and blanch for 1 to 2 minutes, then transfer to a bowl of ice water to cool.

    Preheat a grill (or grill pan) to high heat. Brush the rest of the 4 tablespoons of olive oil across the peaches and halloumi. Then, in batches as needed, grill the peaches and halloumi until well charred, about 3 minutes per side.

    Lay out mixed greens onto a serving platter and top with green beans, peaches and halloumi. Drizzle the dressing over top and garnish with pine nuts.
