Serves 8

Ingredients:

  • 2 cups sugar
  • 1 cup light corn syrup
  • ½ cup water
  • 1 cup butter, chunked
  • 2 cups roasted peanuts
  • 1 tsp. baking soda
  • ½ tsp. sea salt

Directions:

    Butter two parchment-lined baking sheets.

    Combine sugar, corn syrup and water in a saucepan. Cook over medium heat, stirring occasionally until sugar is dissolved and mixture comes to a boil, about 8 to 12 minutes.

    Add butter and continue cooking, stirring occasionally for 15 to 25 minutes or until a candy thermometer reaches 280o.

    Stir in peanuts and continue stirring for 10 to 12 minutes or until the candy thermometer reaches 305o.

    Remove from heat and stir in baking soda and sea salt.

    Pour mixture into prepared baking sheets, spreading evenly into ¼ inch thickness.

    Cool completely and break into pieces.
