A fun take on noodle dishes, these steak bites and zucchini noodles bring together health and flavor for the whole family to enjoy!

Serves: 4

Ingredients:

  • 1¼ lbs. sirloin steak, cut into small cubes
  • 4 medium zucchinis, spiralized
  • 2 Tb. olive oil, divided
  • 3 Tb. butter, divided
  • 2 tsp. garlic, minced
  • ¼ cup beef or vegetable broth
  • 1 Tb. parsley, minced
  • 1 tsp. fresh thyme leaves
  • ½ tsp. red chili pepper flakes
  • Juice from 1 lemon
  • ¼ cup low-sodium soy sauce
  • 1 Tb. preferred hot sauce
  • Black pepper to taste

Directions:

    Mix soy sauce, 1 tablespoon olive oil, hot sauce, pepper and the juice of half a lemon with steak bites. Mix it well and let marinate for at least 15 to 20 minutes.

    Heat 1 tablespoon olive oil in a large skillet on high heat. Place steak bites evenly in the skillet, reserving marinade for later. Cook for 3 to 4 minutes, stirring occasionally, until steak is golden brown. Depending on your skillet size, you may have to do this in separate batches.

    Add 2 tablespoons of butter and garlic to the skillet. Cook for 1 to 2 minutes, stirring so the meat becomes coated. Remove the bites and set aside.

    Add butter, lemon juice, red pepper flakes, beef broth and the reserved marinade to the skillet. Bring to a simmer and reduce heat, stirring constantly.

    Add spiralized zucchini noodles to skillet and toss to cook marinade into noodles. Stir in fresh parsley and thyme and allow to cook until water evaporates to your preference. Add steak back to skillet to reheat, and serve immediately!
