Craving ice cream? Try this protein-rich dupe to satisfy your sweet tooth without all the sugar.

Yields 2 ½ cups

Ingredients:

  • 3 cups reduced-fat plain Greek yogurt
  • ¾ cup sugar
  • 1 ½ tsp. vanilla extract
  • 1 Tb. cold water
  • 1 Tb. lemon juice
  • 1 tsp. unflavored gelatin

Directions:

    Line a strainer or colander with 4 layers of cheesecloth. Place over a bowl.

    Place yogurt in the prepared strainer and cover yogurt with sides of cheesecloth. Refrigerate for 2 to 4 hours.

    Remove yogurt from the cheesecloth and transfer to another bowl, discarding the strained liquid.

    Add sugar and vanilla to the yogurt, stirring until the sugar is dissolved.

    In a small microwave-safe bowl, combine cold water, lemon juice and gelatin. Let stand for 1 minute.

    Microwave the gelatin mixture on high for 30 seconds. Stir and let stand for 1 minute or until gelatin is completely dissolved.

    Stir the gelatin mixture into the yogurt. Cover and refrigerate for 40 minutes or until cold.

    Pour yogurt mixture into the cylinder of an ice cream maker. Freeze according to the manufacturer’s directions.

    Transfer frozen yogurt to a freezer container. Freeze for 2 to 4 hours or until firm enough to scoop.
