Yields 2 ½ cups
Ingredients:
- 3 cups reduced-fat plain Greek yogurt
- ¾ cup sugar
- 1 ½ tsp. vanilla extract
- 1 Tb. cold water
- 1 Tb. lemon juice
- 1 tsp. unflavored gelatin

Line a strainer or colander with 4 layers of cheesecloth. Place over a bowl. -

Place yogurt in the prepared strainer and cover yogurt with sides of cheesecloth. Refrigerate for 2 to 4 hours. -

Remove yogurt from the cheesecloth and transfer to another bowl, discarding the strained liquid. -

Add sugar and vanilla to the yogurt, stirring until the sugar is dissolved. -

In a small microwave-safe bowl, combine cold water, lemon juice and gelatin. Let stand for 1 minute. -

Microwave the gelatin mixture on high for 30 seconds. Stir and let stand for 1 minute or until gelatin is completely dissolved. -

Stir the gelatin mixture into the yogurt. Cover and refrigerate for 40 minutes or until cold. -

Pour yogurt mixture into the cylinder of an ice cream maker. Freeze according to the manufacturer’s directions. -

Transfer frozen yogurt to a freezer container. Freeze for 2 to 4 hours or until firm enough to scoop.
