Serves 4
Ingredients:
- 4 large bell peppers
- 1 lb. lean ground beef
- 1 oz. taco seasoning
- ½ onion, diced
- 1 can chopped green chiles
- ¼ cup red enchilada sauce
- 2 cups Mexican blend shredded cheese

Preheat the oven to 350° and line a baking sheet with aluminum foil. -

In a medium skillet, heat ground beef over medium heat. -

Stir in taco seasoning according to the package. Toss in onions and allow to soften. -

Stir in green chiles and enchilada sauce. Once heated through, turn off the heat. -

Cut tops off of each pepper and hollow them out, removing ribs and seeds. Place each pepper on the baking sheet. -

Fill peppers with alternating layers of beef and cheese until there is a layer of cheese right at the top of the pepper. -

Place the top back on each pepper and bake for 30-40 minutes or until the peppers are tender and the cheese is melted. -

Bonus: To reheat for an awesome extra meal, wrap in foil and bake at 350° for 10 to 15 minutes or until heated through.
