Ingredients:
- 2 cups long grain rice, rinsed and drained
- 14 oz. coconut milk
- 1 1/2 c. water
- 1 Tb. granulated sugar
- 1 tsp. kosher salt

In a large pot over medium heat, combine rice, coconut milk, water, sugar and salt. Bring to a boil then reduce heat, letting simmer covered for 18 to 20 minutes. -

Remove from heat and let sit for 10 minutes. -

Fluff with a fork and serve.
