Ingredients:

  • 3 medium zucchini, about 1½ lbs. total
  • 1½ tsp. salt, divided, more for serving
  • 3/4 cup all-purpose flour
  • 1 egg
  • 1/3 cup milk
  • 1 cup seasoned breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp. ground black pepper
  • Vegetable oil, for frying
  • Chopped parsley, for serving
  • Lemon wedges, for serving

    Cut the zucchini into strips, approximately 3 inches long and ½ inch wide, resembling french fries. Season pieces with salt and lay them out on paper towels to sit for 10 minutes. Then pat each piece dry.

    While the zucchini is sitting, place flour on a plate. In a shallow bowl, whisk egg and milk together. In another bowl, combine breadcrumbs, Parmesan cheese, remaining ½ teaspoon of salt and ½ teaspoon of pepper.

    Heat a large skillet over medium-high heat, filling it with about ½ inch of vegetable oil. Once the oil is hot, cook zucchini pieces in the skillet until golden brown on all sides. You can fry the zucchini in batches to prevent overcrowding the skillet. You may need to add more oil to the skillet as you fry more zucchini.
