Ingredients:
- 1 lb. raw shrimp, shelled and deveined
- 3 Tb. olive oil, divided
- 4 cloves garlic, minced
- 1 pinch red pepper flakes (optional)
- ¼ cup vegetable broth
- 1 tsp. honey (optional)
- Juice of 1½ limes
- 3 medium zucchini, spiralized or cut into noodles
- Salt and cracked pepper, to taste
- 1 tsp. lime zest
- 2 Tb. cilantro, chopped
Directions:
- 
				Use a bowl to combine 2 tablespoons of olive oil, garlic, red pepper flakes, 1 tablespoon of cilantro, honey, lime juice and lime zest. Toss mixture with raw shrimp to mix and coat shrimp. Then let marinate for 15 to 20 minutes.1 
- 
				In a pan, heat 1 tablespoon of olive oil over medium-high heat. Add the drained shrimp and cook for 2 minutes, then flip and add marinade to the pan. Let cook for another minute, then set the shrimp aside.2 
- 
				Using the same skillet, add vegetable broth and let simmer for 2 minutes. Add the zucchini noodles and cook until tender, around 2 minutes. Add the shrimp back to the pan with the noodles and adjust the seasoning to taste.
