Shrimp and pasta without the extra carbs! This fresh, zesty dish is a great alternative to the same old pasta recipe that you’re getting bored of.

Cook time: 10 minutes
Serves: 2

Ingredients:

  • 1 lb. raw shrimp, shelled and deveined
  • 3 Tb. olive oil, divided
  • 4 cloves garlic, minced
  • 1 pinch red pepper flakes (optional)
  • ¼ cup vegetable broth
  • 1 tsp. honey (optional)
  • Juice of 1½ limes
  • 3 medium zucchini, spiralized or cut into noodles
  • Salt and cracked pepper, to taste
  • 1 tsp. lime zest
  • 2 Tb. cilantro, chopped

Directions:

    Use a bowl to combine 2 tablespoons of olive oil, garlic, red pepper flakes, 1 tablespoon of cilantro, honey, lime juice and lime zest. Toss mixture with raw shrimp to mix and coat shrimp. Then let marinate for 15 to 20 minutes.

    In a pan, heat 1 tablespoon of olive oil over medium-high heat. Add the drained shrimp and cook for 2 minutes, then flip and add marinade to the pan. Let cook for another minute, then set the shrimp aside.

    Using the same skillet, add vegetable broth and let simmer for 2 minutes. Add the zucchini noodles and cook until tender, around 2 minutes. Add the shrimp back to the pan with the noodles and adjust the seasoning to taste. Toss everything together and serve immediately with a garnish of cilantro!
