Ingredients:
- 1 lemon
- 1 lb. boneless skinless chicken breast
- ¼ cup all-purpose flour
- ½ tsp. salt
- ½ tsp. ground pepper
- 1 Tb. + 4 tsp. extra-virgin olive oil, divided
- 1 large sweet onion, sliced
- 1 clove garlic, minced
- 1 cup reduced-sodium chicken broth
- ¼ cup dry white wine
- 4 tsp. drained capers
- ¼ cup chopped parsley
Directions:

Cut lemon in half and juice one half of it. Cut the other half into slices for garnish later. Slice chicken breasts into 8 cutlets.

Combine flour, salt and pepper in a shallow bowl. Dredge each chicken cutlet in flour mixture to coat. Remove and discard 2 teaspoons of the flour mixture, and set aside the rest to use in the sauce.

Use a large non-stick frying pan to heat 2 teaspoons of oil over medium-high heat. Add half the chicken and cook until the bottoms are browned, about 2 to 4 minutes. Flip the cutlets and continue cooking until browned on the bottom, another 2 to 4 minutes. Remove cooked cutlets from the pan and set aside. Add 2 more teaspoons of oil to the pan and repeat cooking process for the remaining chicken cutlets. Lower the heat to medium-low if needed to avoid overcooking.

Wipe out the frying pan with a paper towel, and add 1 teaspoon of oil. Raise the heat back to medium-high. Toss in onion and cook while stirring until they are softened or browned, about 5 to 7 minutes. Toss in garlic and cook while stirring until the garlic is fragrant and begins to brown, only about 30 to 90 seconds.

Time for the sauce to bring it all together! Sprinkle the leftover flour mixture into the frying pan with the onions and garlic and stir together. Stir in the white wine, capers, lemon slices and lemon juice. Increase heat to high to bring the sauce to a simmer and stir constantly.

Return the chicken to the skillet along with any juices left on the plate—that’s extra flavor! Gently mix to coat in the sauce and bring to a simmer until sauce is thickened and the chicken is cooked through, around 3 to 4 minutes.

Stir in parsley, remove from heat and serve immediately! Pair with your favorite pasta, rice or cooked vegetables to help make this meal go even further.
