Ingredients:

  • 1 ½ cups vanilla wafers, crushed
  • 48 whole vanilla wafers
  • 4 Tb. melted butter
  • ¼ tsp. kosher salt
  • 16 oz. cream cheese, softened
  • ¾ cup granulated sugar
  • 2 cups heavy cream
  • 1 tsp. vanilla extract
  • 1 pkg. instant vanilla pudding mix
  • 1 ¾ cups whole milk
  • 5 large ripe bananas, sliced
  • 1 pkg. frozen whipped topping

Directions:

    In a medium bowl, stir together crushed vanilla wafers, butter and salt.

    Press this mixture into the bottom of a 9x13” baking dish.

    In a large bowl, beat together cream cheese and sugar until fluffy.

    Beat in heavy cream and vanilla extract until stiff peaks form.

    In a medium bowl, whisk together pudding mix and whole milk. Let pudding stand for 5 minutes until thickened.

    Fold pudding into cheesecake mixture.

    Pour half the filling into your vanilla wafer crust. Add a layer of sliced bananas and vanilla wafers, then pour the remaining filling over the top.

    Add another layer of sliced bananas and vanilla wafers.

    Refrigerate until cool and set, at least 2 hours.

    Top with whipped topping, banana slices and crushed vanilla wafers for garnish.
