Ingredients:
- 1 Tb. olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups red lentils
- 2 tomatoes, diced
- 2 large carrots, peeled and sliced
- 6 cups vegetable broth
- ½ tsp. turmeric
- ½ tsp. cumin
- ½ tsp. black pepper
- Fresh cilantro, chopped for garnish
- Lime juice, for serving

Sauté onion, carrot and garlic with olive oil until fragrant (about 3 minutes) in a large pot over medium-high heat. -

Mix in tomatoes and continue cooking for 2 more minutes until broken down. Mix in red lentils and stir until well combined. Mix in cumin, turmeric and vegetable broth. -

Bring the pot to a boil on high heat. -

Once boiling, reduce the heat to a simmer and cook, uncovered, for 12 to 15 minutes, or until the lentils are cooked through. -

Garnish with lime juice and cilantro to taste and serve warm!
