Ingredients:

  • 2 tsp. coconut oil
  • 1½ tsp. coarse kosher salt, divided
  • 1 tsp. Italian seasoning
  • ½ tsp. crushed red pepper
  • ¼ tsp. ground black pepper
  • 1½ lbs. boneless salmon filet, skinned
  • 1 avocado
  • ¼ cup chopped basil
  • 1 Tb. lime juice
  • Chopped scallions, garnish

Directions:

    Heat oil in a large cast-iron skillet over medium heat. Season salmon with ¾ teaspoon salt, Italian seasoning, crushed red pepper and black pepper. Cook salmon filets in hot oil until browned along the bottom edge, around 4 to 6 minutes. Flip filets and remove pan from heat. Let them finish cooking for about 4 more minutes as the pan cools.

    Peel, pit and mash avocado with basil, lime juice and ¾ teaspoon salt.

    Serve the filets topped with avocado mixture. Garnish with scallions as desired.
