Ingredients:

  • 1½ lbs. sweet potatoes, peeled and diced
  • 4 cups cauliflower rice
  • 1/3 cup sesame seeds
  • 2 garlic cloves
  • 1 tsp. paprika
  • 1 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 1¼ tsp. kosher salt
  • 3/4 tsp. freshly ground black pepper
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 cup bread crumbs
  • 2 Tb. extra virgin olive oil
  • 4 Tb. mayonnaise
  • 2 tsp. hot sauce
  • 2 avocados, peeled and pitted
  • 2 Tb. lemon juice
  • 1/2 cup green onions, thinly sliced
  • 4 lettuce leaves
  • 4 Kaiser rolls, halved

    Put the sweet potatoes in a pot and cover with water. Bring the pot to a boil and reduce to a simmer until potatoes are tender—about 12 to 15 minutes.

    Using a food processor, puree the potatoes, cauliflower, sesame seeds, garlic cloves, paprika, cumin, coriander, salt and pepper until smooth. Add the egg and pulse together to combine. Add in the flour and bread crumbs and continue to pulse until well combined.

    Divide the mixture into four even clumps or piles, and form into patties.

    Heat olive oil in a skillet over medium heat and add the patties. Cook them like a regular burger—about 4 minutes on each side, flipping once.

    While they are cooking, whisk together mayonnaise and hot sauce. In a separate bowl, mash the avocado with the lemon juice.

    Spread the mayonnaise mixture onto the buns, top with lettuce, patty and the avocado mixture. There are many ways you can customize this like a traditional burger, so be creative and find the perfect combination for you!
