This ice cream cake brings back memories of summer birthdays and celebrations! Here’s a simple recipe you can try at home!

Serves: 10-12

Ingredients:

  • 2 pt. mint chip ice cream, softened
  • 10 mint chocolate sandwich cookies, crushed and divided
  • 24 ice cream sandwiches, divided (about 3.5 oz. each)
  • 1, 8-oz. container of frozen whipped topping, thawed

    Use plastic wrap to line a 9x9-inch baking ban.

    In the pan spread 1 pint of the mint ice cream in an even layer. In the next layer sprinkle about 6 of the crushed cookies. Then another layer of 1 pint of ice cream. Now cover the pan in plastic wrap and freeze for 2 to 3 hours, ice cream needs to freeze back to firm.

    When ready, transfer the ice cream wrapped in plastic to a sheet pan. Now line the 9x9-inch baking pan with parchment paper and place half of the ice cream sandwiches in one layer. You may need to cut sandwiches a bit as they will fit snuggly in the pan. Place the prepared mint ice cream square on top of the sandwiches, then place the remaining ice cream sandwiches on top of everything. Freeze the layered pan for another 1 to 2 hours.

    Use the parchment paper to remove the cake from the baking pan and transfer it to a serving platter. Use a spatula to smooth out the sides of the cake and spread whipped topping on top. You can use the remaining 4 sandwiches to decorate the cake in a way you like!
