Serves: 4

Ingredients:

  • 1 cup water
  • 2½ Tb. + ½ cup white sugar 
  • 2 Tb. vegetable oil
  • 1 cup all-purpose flour
  • 2 qt. oil for frying
  • ½ cup additional white sugar, to taste
  • 1 tsp. ground cinnamon

Directions:

    Mix water, 2½ tablespoons of sugar, salt and vegetable oil in a small saucepan and warm over medium heat. Bring mixture to a boil and remove from heat. Mix in flour and stir until the mixture becomes a ball.

    Begin heating oil for frying in a deep fryer or deep pot to 375°F. While that is heating, transfer the dough into a strong pastry bag with a star tip.

    When the oil is heated, begin piping 5 to 6-inch long strips into the oil. Be careful not to do too many at once, or you will crowd the fryer. Let them fry until cooked to a beautiful golden brown. Pull them out of oil with tongs or a slotted spoon and lay them on paper towels to drain.

    Combine ½ cup of sugar and cinnamon into a bowl, then scatter on a clean surface. Roll the drained churros in the mixture to coat, and enjoy!
