Ingredients:
- 9 graham crackers
- 4 Tb. butter, room temperature
- 8 oz. cream cheese
- ½ cup 5% plain Greek yogurt
- ¼ cup honey
- 1 egg white
- 1 tsp. vanilla extract
- 1 Tb. fresh lemon juice
- 1 cup fresh blueberries
Directions:

Preheat oven to 350ºF and spray an 8 x 8 inch pan with nonstick spray.

Blend graham crackers and butter until the texture is a light crumble.

Pour graham cracker crumbs into the pan and press into the bottom so that it is evenly spread through the whole pan.

Bake crust for 7 minutes and remove from oven.

Rinse blender and add in cream cheese, greek yogurt and honey. Blend together until smooth.

Add egg white, vanilla and lemon juice and continue blending until smooth.

Add blueberries and blend into a puree.

Pour the mixture into pan on top of the graham cracker crust and spread over evenly.

Bake in the oven for 25 to 30 minutes.

When done baking, remove from the oven and let cool for 30 minutes. Chill overnight or at least 2 hours in the refrigerator before slicing and serving.
