Leftover taco meat, I’d like to introduce you to tater tots! I know you and tortilla chips were a thing, yet you two will live happily ever after layered with cheese, fresh cilantro, pico de gallo and all the things you love about nachos.

Prep time: 15 minutes
Cook time: 35 minutes
Serves 6-8 people

Ingredients:

  • 1 32 oz. package of tater tots
  • 1 lb. ground beef, cooked with taco seasoning
  • 1-2 cups shredded cheese
  • ¼ cup green onion, chopped
  • ⅓ cup black olives, chopped
  • ⅓ cup salsa or pico de gallo
  • ¼ cup sour cream
  • ¼ cup guacamole
  • 2 Tb. fresh cilantro, chopped

Directions:

    Bake tater tots according to package directions.

    While tots bake, either reheat seasoned ground beef, or brown beef with taco seasoning according to package directions.

    When the tots finish baking, remove from the oven but do not turn the oven off. Top tots with beef and a layer of cheese. Return to the oven and bake until the cheese melts.

    Remove pan from oven and top with green onions, olives, salsa, sour cream, guac and fresh cilantro.

    Serve immediately.

Tips:

Instead of the nacho version, try one of these other loaded tater tot combinations.

  • Greek Tots—feta cheese, tomato, black olive and chopped white onion
  • Breakfast Tots—ham, Swiss cheese, cooked scrambled eggs and bacon
  • Roadkill Tots—bacon, cheddar cheese, chopped onion and ranch dressing
  • Pizza Tots—marinara sauce, Italian cheese, crumbled sausage and chopped onion
