Ingredients:
Sauce:
- ½ cup pineapple juice
- ¼ cup rice vinegar
- 2 Tb. ketchup
- 1 tsp. sriracha
- 1 Tb. soy sauce
- 1 garlic clove, minced
- 3 Tb. sugar
- 2 tsp. cornstarch
Skewers:
- 1½ lbs. pork tenderloin, cut into cubes
- 1 pineapple, peeled, cored and cubed
- Extra-virgin olive oil
- Salt and ground black pepper, to taste
- 1 bunch scallions, thinly sliced
- Skewer sticks

Mix pineapple juice, rice vinegar, ketchup, sriracha, soy sauce and garlic in a small sauce pot. Continue mixing as you bring it to a simmer over the stove.

While the sauce is simmering, mix together the sugar and cornstarch, then add to the pot and whisk well.

After 3 to 4 minutes, the sauce should thicken. Remove from heat and set aside. Place the pork and pineapple cubes on the skewers, alternating every other piece. Repeat until all ingredients have been used.

Brush the skewers on all sides with olive oil, and season with salt and pepper to taste. Cook the skewers on a grill or grill pan until charred on both sides, about 4 to 5 minutes per side, making sure the pork comes to at least 160°F.

While the skewers are still warm, brush the sweet-and-sour sauce onto them. Garnish with scallions and enjoy.
