Serves 4
Ingredients:
- 4 slices bacon
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 large sweet potato, diced
- 2 cups kale, chopped
- ¼ tsp. cumin
- ¼ tsp. garlic powder
- ¼ tsp. paprika
- ½ tsp. kosher salt
- ½ tsp. ground black pepper
- 4 eggs
- 1 green onion, sliced
Directions:

Heat a large pan on medium heat. Add bacon and saute until golden and crispy. Remove from the pan and drain on a paper towel.

Add diced onion and bell pepper to the pan and saute in bacon grease until soft, about 1 minute.

Add sweet potato chunks and spices. Cook for 10 to 12 minutes, stirring often. Place a lid on the pan for the last 5 minutes to soften potatoes until fork tender.

Add bacon back into the pan along with kale. Stir for an additional 1 to 2 minutes or until the kale is wilted.

Create four wells in the hash. Crack eggs into each well, cooking until done.

Season hash with salt and pepper and top with sliced green onion.
