Prep time: 1 hour

Ingredients:

  • Old-fashioned oats
  • Shredded coconut
  • Creamy peanut butter
  • Ground flaxseed
  • Plant-based semisweet chocolate chips
  • Agave or maple syrup
  • Vanilla extract
  • Chia seeds
  • Any other desired addition or substitute

Directions:

    Mix equal proportions of all ingredients in a large bowl. Add in more peanut butter if needed to help combine ingredients.

    Cover the bowl, and chill for at least one hour.

    Use an ice cream scoop or cookie dough scoop and roll the mixture into balls.
