These delicious apples are sure to hit the spot as sweater weather settles in!

Cook time: 40 minutes
Serves: 4

Ingredients:

  • 2 apples, halved (we recommended honeycrisp, but any kind will work)
  • 1 cup granola, any kind
  • ¼ cup light brown sugar, packed
  • 2 Tb. unsalted butter, melted
  • 1 tsp. vanilla bean paste (or extract)
  • ¾ tsp. ground cinnamon

Directions:

    Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with non-stick cooking spray.

    Carefully scoop out apple filling, leaving about ¼ inch apple shell left in skin. Set apples in prepared dish.

    In a medium bowl, stir together granola, brown sugar, melted butter, vanilla extract and cinnamon.

    Spoon mixture into apple halves. Cover dish with aluminum foil and bake for 20 minutes.

    Remove foil and bake for another 15-20 minutes, or until apples are tender.

    Remove from oven and let cool slightly. Serve immediately.
