Ingredients:

  • ½ cup cooked quinoa
  • 2 Tb. fresh basil, chopped
  • 2 tsp. balsamic vinegar
  • ¼ cup broccoli
  • ¼ cup onion, diced
  • ¼ cup zucchini, cubed
  • 1 avocado, sliced
  • 1 bell pepper, chopped
  • 1 cup black beans, cooked
  • 1 tomato, diced
  • Spinach
  • Lemon juice

Directions:

    Prepare quinoa and black beans according to package directions.

    In a bowl, mix quinoa with black beans then toss with basil, balsamic vinegar, broccoli, onion, zucchini, avocado and bell pepper.

    In a separate bowl, toss spinach with tomato and lemon juice.

    Combine together and serve.
