Serves 6
Ingredients:
- 16 oz. penne pasta
- 1 tsp. minced garlic
- 16 oz. ground meat of your choice
- 1 large onion, chopped
- 1 tomato, diced
- 6 oz. tomato paste
- 1 tsp. fresh or dried basil
- 1 tsp. fresh or dried oregano
- 3 cups shredded part-skim mozzarella cheese

Preheat the oven to 350° and grease a 9x13” baking dish. -

Cook pasta according to package directions. -

Brown meat with garlic and onions in a large skillet; drain. -

Stir in tomato chunks, tomato paste, basil and oregano. Cook until heated through, stirring occasionally. -

In the prepared baking dish, combine pasta, tomato mixture and 2 cups of shredded cheese. -

Sprinkle the remaining cheese evenly on top. -

Bake for 20 to 25 minutes or until the casserole is heated all the way through and the cheese is melted.
