Serves 12

Ingredients:

  • 1 lb. ground pork sausage
  • 1 Tb. taco seasoning
  • ¼ tsp. cayenne pepper
  • 14 oz. black beans, rinsed
  • 1 ½ cups salsa
  • ½ cup water
  • 2 Tb. butter
  • 3 Tb. flour
  • 1 ¾ cups milk
  • 1 cup shredded cheese
  • Fresh cilantro

Directions:

    In a large skillet, brown the sausage. Add taco seasoning, cayenne pepper, black beans and salsa. Thin with water as needed.

    Melt the butter in a small saucepan over medium heat. Add flour and stir to form a paste. Add in milk a little at a time, whisking until combined.

    Stir cheese into milk mixture until melted. Add cheese sauce to the sausage mixture. Mix well until combined.

    Transfer to a serving dish and top with cilantro.
