A quick and easy breakfast for one, this fried egg taco recipe brings a lot to breakfast with very little prep!

Serves: 1

Ingredients:

  • 1/3 cup feta cheese, crumbled
  • 1 egg
  • 1 small or 1/2 large avocado, mashed
  • Lime, for garnish
  • 1 tortilla
  • Black pepper, to taste
  • Red pepper flakes, to taste

Directions:

    Heat a small, nonstick skillet over medium heat. When up to heat add crumbled feta in a circle around the pan. Crack your egg directly into the center of the pan and add your preferred seasonings. (Keep in mind that feta is rather salty, so you won’t need to add much salt!)

    Cover the skillet and cook until the whites of the egg begin to crispen. While that is cooking top a tortilla with mashed avocado.

    When your egg is ready, remove it in one piece with a spatula and transfer it to the tortilla. You can add a squeeze of lime juice for a little extra zest! And you’re breakfast is ready! It’s really that simple!
