Ingredients:
- 1 Tb. vegetable oil
- 8 ears yellow corn, husks removed and cut off the cob
- 1 poblano pepper, seeded and diced
- 6 green onions, thinly sliced, whites and greens separated
- 1 tsp. kosher salt, more to taste
- ½ tsp. ground black pepper, more to taste
- 2 garlic cloves, grated
- ¾ cup crumbled cotija cheese
- ¾ cup chopped fresh cilantro
- ¼ cup mayonnaise
- ¼ cup sour cream
- 1 medium lime, zested and juiced
- 1 tsp. chili powder, more to taste
Directions:
- 
				Over medium, heat a large cast iron skillet. Add oil, corn kernels, poblano, onion whites, salt and pepper. Let the corn begin to char, this should take about 8 to 10 minutes. Once you see charing, add in garlic and remove from heat to transfer to a large mixing bowl.1 
- 
				Add cheese, cilantro, mayonnaise, sour cream, lime zest, lime juice, 1 teaspoon of chili powder (or more if desired) and the green onion greens. Fold everything together to combine.2
