This coffee-rubbed London Broil paired with roasted Brussels sprouts is a delicious dinner for two that’s easy to make and a great alternative for the carb conscious.

Ingredients:

Steak ingredients:

  • 1 Tb. olive oil
  • 1 10 oz. London Broil steaks
  • 1 tsp. coffee grounds
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. garlic powder
  • ½ tsp. onion powder

Brussels sprouts ingredients:

  • 1 tsp. olive oil
  • 1 lb. Brussels sprouts, cleaned, trimmed and sliced in half
  • 2 tsp. reserved steak seasoning

Directions:

    Preheat the oven to 400°F.

    Place Brussels sprouts on a small sheet pan and drizzle with olive oil. Set aside.

    With an oven burner set to high-heat, preheat a 10-inch or larger cast iron skillet. Once the pan is hot, lower to medium heat.

    While the pan heats, combine coffee grounds, garlic and onion powders, salt and pepper. Rub mixture on top, bottom and sides of steak, reserving 2 tsp. for brussel sprouts.

    Add oil to the hot pan, coating it evenly.

    Place steak in the pan and let sear completely for 5 minutes. Flip and cook for 5-9 minutes depending on desired doneness. Let rest for 10 minutes and wrap in foil to keep warm.

    Sprinkle remaining seasoning mix over Brussels sprouts. Toss with hands to combine. Bake sprouts for 13-15 minutes in the oven.

    Serve immediately.

Tips:

  • If Brussels sprouts aren’t your thing, substitute asparagus or green beans.
  • Worried about caffeine consumption at dinnertime? Swap in decaf coffee for your dry rub.
