Serves 6
Dressing ingredients:
- 1/4 cup Greek yogurt
- 1/4 cup olive oil
- 2 Tb. lemon juice
- 2 garlic cloves, minced
- 2 tsp. mint leaves, chopped
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 tsp. oregano
Salad ingredients:
- 1 large English cucumber, thinly sliced
- 14 oz. chickpeas, drained and rinsed
- 1/4 red onion, thinly sliced
- 1/4 cup parsley, chopped
- 1/4 cup mint leaves, chopped
- 2 Tb. dill, chopped

In a small bowl, mix together the ingredients for the dressing and set aside. -

In a large bowl, mix together the cucumber, chickpeas, red onion, parsley, mint and dill. -

Drizzle with desired amount of dressing and toss to combine. Serve cold.
