Refreshing, hydrating and filling. Is there nothing this salad can’t do?!

Prep time: 15 minutes
Serves 6

Dressing ingredients:

  • 1/4 cup Greek yogurt
  • 1/4 cup olive oil
  • 2 Tb. lemon juice
  • 2 garlic cloves, minced
  • 2 tsp. mint leaves, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 tsp. oregano

Salad ingredients:

  • 1 large English cucumber, thinly sliced
  • 14 oz. chickpeas, drained and rinsed
  • 1/4 red onion, thinly sliced
  • 1/4 cup parsley, chopped
  • 1/4 cup mint leaves, chopped
  • 2 Tb. dill, chopped

Directions:

    In a small bowl, mix together the ingredients for the dressing and set aside.

    In a large bowl, mix together the cucumber, chickpeas, red onion, parsley, mint and dill.

    Drizzle with desired amount of dressing and toss to combine. Serve cold.
