Don’t toss those overripe bananas! With a dash of cream cheese, you can turn this beloved classic into a fun new dessert.

Serves 6

Ingredients:

  • 2 eggs
  • 1 cup brown sugar
  • ¼ cup granulated sugar
  • ¼ cup vegetable oil
  • 1 Tb. vanilla extract
  • ¼ cup sour cream
  • 4 oz. cream cheese, softened
  • 2 mashed ripe bananas
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup and 3 Tb. all-purpose flour

Directions:

    Preheat the oven to 350°F and grease a loaf pan.

    In a large bowl, combine one egg, brown sugar, vegetable oil, sour cream and vanilla, whisking to combine. Add in the mashed bananas and continue to stir.

    Add 1 cup of all-purpose flour, baking powder, baking soda and salt, stirring gently until combined.

    Spread half the banana batter into the prepared loaf pan.

    In a separate bowl, combine cream cheese, 1 egg, granulated sugar and 3 tablespoons of all-purpose flour. Spread this mixture over banana batter.

    Top with remaining banana batter and smooth gently until cream cheese is covered.

    Bake for 40 minutes or until the top is golden and the center is set.
