Pasta salad makes the perfect meal prep. Throw it in different sealable containers in the fridge and enjoy lunch ready-to-go when you want it!

Prep time: 1 hour
Serves: 4

Salad Ingredients:

  • 2 medium cooked chicken breasts, shredded or chopped
  • 2 ripe avocado, pitted and diced
  • 1 lb. rotini pasta or pasta of choice, cooked
  • ½ cup red onion, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup fresh basil, chopped
  • Salt and pepper, to taste

Dressing Ingredients:

  • ½ cup white wine vinegar
  • 1 Tb. Italian seasoning
  • ¾ cup extra virgin olive oil
  • Salt and pepper, to taste

Directions:

    In a small bowl or jar, mix dressing ingredients together.

    Add the remaining ingredients together in a large bowl.

    Pour the dressing over the pasta into the large bowl and toss gently until all ingredients are well combined. Serve immediately, or refrigerate for later!
