Ingredients:
- 2 lb. butternut squash, peeled and cut into 1-inch pieces
- 2 Tb. olive oil
- 2 cloves garlic, minced
- 2 Tb. thyme, chopped
- ½ lb. bacon, chopped
- 1 ½ cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- Kosher salt
- Ground black pepper
- Parsley, chopped

Preheat oven to 425°F.

In a large baking dish, toss butternut squash with olive oil, garlic, thyme, salt and pepper.

Top with bacon and bake for 20 to 25 minutes or until the squash is tender and the bacon is cooked through.

Remove from oven and top with cheeses. Bake for another 5 to 10 minutes or until the cheese is melted.

Garnish with parsley and serve warm.
