Ingredients:

  • 1 Tb. olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups red lentils
  • 2 tomatoes, diced
  • 2 large carrots, peeled and sliced
  • 6 cups vegetable broth
  • ½ tsp. turmeric
  • ½ tsp. cumin
  • ½ tsp. black pepper
  • Fresh cilantro, chopped for garnish
  • Lime juice, for serving

    Sauté onion, carrot and garlic with olive oil until fragrant (about 3 minutes) in a large pot over medium-high heat.

    Mix in tomatoes and continue cooking for 2 more minutes until broken down. Mix in red lentils and stir until well combined. Mix in cumin, turmeric and vegetable broth.

    Bring the pot to a boil on high heat.

    Once boiling, reduce the heat to a simmer and cook, uncovered, for 12 to 15 minutes, or until the lentils are cooked through.

    Garnish with lime juice and cilantro to taste and serve warm!
