Ingredients:

  • 2 cups fresh blueberries
  • ½ red bell pepper, chopped
  • ½ yellow bell pepper, chopped
  • ¼ red onion, finely chopped
  • 1 jalapeño, finely chopped
  • ¼ cup freshly chopped cilantro
  • Juice of 2 small limes
  • 1 Tb. extra-virgin olive oil
  • Kosher salt
  • Ground black pepper

    In a large bowl, mix all the ingredients and toss to combine.

    Season with salt and pepper then serve with warm tortillas or corn chips.
