Ingredients:

  • 3 Tb. extra-virgin olive oil
  • 2 Tb. sweet chili sauce
  • 1 Tb. sriracha
  • 1 lime, juiced 
  • 3 cloves garlic, minced
  • 1 head cauliflower, cut into florets
  • Kosher salt, to taste
  • Pepper, to taste
  • 1 tsp. cilantro, chopped for garnish

Directions:

    Preheat the oven to 425°F.

    In a small bowl, whisk together the olive oil, sweet chili sauce, sriracha, lime juice and garlic.

    On a large baking sheet, toss the cauliflower florets in the sauce until fully coated. Season florets generously with salt and pepper.

    Spread the florets evenly on the prepared baking sheet and roast until slightly charred or tender, about 30 to 35 minutes.

    Garnish with cilantro and serve.
