Ingredients:
- 24 slices of Genoa salami, 4-inch circles
- 1 cup marinated artichoke hearts, drained and chopped
- ⅓ cup roasted red peppers, chopped
- ¼ cup basil, chopped
- 4 oz. fresh mini mozzarella balls

Preheat the oven to 400°F with a rack in the middle of the oven. -

Place one salami slice into each muffin cup. Press the salami slices into cups. -

Bake for 7 to 10 minutes or until the salami is crisp. Remove from the oven and let cool. -

In a large bowl, mix together artichoke hearts, roasted peppers, basil and mozzarella. -

Place the salami cups on a platter and fill them with the artichoke mixture.
