Ingredients:
- 1 large (about 8 oz.) sweet potato
- 1 Tb. canola oil
- ¼ tsp. sea salt
- ¼ tsp. ground black pepper

Using a mandoline, slice the sweet potato into ¹/₁₆ -inch pieces. Put slices into a large bowl of cold water and let soak for about 20 minutes. When ready, drain and dry with paper towels. -

Put the slices back into the dried bowl and toss in oil, salt and pepper. -

Preheat the air fryer to 350°F. Lightly coat the air fryer basket with cooking spray and arrange potato slices evenly on the basket. Cook them in rounds if the basket is too small. -

Cook potato slices until lightly golden and crispy, about 12 to 16 minutes, while continually rotating them every 4 minutes. Pay close attention during the last 2 to 3 minutes, checking them often to avoid overcooking. -

Let chips cool; they will continue to crispen while they are cooling. Serve once cooled or store in an airtight container for later!
