  • 1/2 cup pistachios, chopped
  • 1/2 cup pecans, chopped
  • 1/2 cup almonds, chopped
  • 1/2 cup dried cherries or cranberries
  • 1 cup dates, figs or prunes, chopped
  • 1/2 cup dried apricots, mango or papaya, chopped
  • 1/3 cup mini chocolate chips
  • 1/3 cup all-purpose flour
  • 1/8 tsp. baking soda
  • 1/4 tsp. salt
  • 1/3 cup light brown sugar
  • 1 large egg
  • 1/2 tsp. pure vanilla extract

Directions:

  • 1

Preheat oven to 325°F and place the rack in the center of the oven.

Line an 8-inch baking pan with foil.
  • 3

In a large bowl, combine the nuts, dried fruits and chocolate chips.
  • 4

Add the flour, baking soda, salt and sugar, stirring until all the fruit and nuts are completely coated with the flour mixture.
  • 5

In a separate bowl, beat the egg and vanilla for 2 to 4 minutes or until light colored and thick.

Add the egg mixture to the dry mixture and stir until all the fruit and nuts are completely coated with the batter.
  • 7

Evenly spread into the prepared pan, pressing to compact the batter.

Bake for about 35 to 40 minutes or until the batter is golden brown and is just starting to pull away from the sides of the pan.
  • 9

    Remove from oven and cool.
