A tried and true classic

Prep time: 25 minutes
Chill time: 3 hours
Serves 8 people

Ingredients:

  • 1¼ cups graham cracker crumbs
  • 2 Tb. sugar
  • ⅓ cup butter, melted
  • ¾ cup boiling water
  • 1 pkg. (3 oz.) strawberry flavor gelatin
  • 4 oz. cream cheese, softened
  • 4 cups fresh strawberries, divided
  • 2½ cups thawed frozen whipped dessert topping, divided

Directions:

    Combine cracker crumbs, sugar and butter. Press into the bottom and sides of a 9-inch pie plate. Refrigerate while preparing pie filling.

    In a medium bowl, combine boiling water and gelatin. Stir 2 minutes or until gelatin completely dissolves.

    In a large bowl, beat cream cheese with a whisk attachment until creamy. Gradually add gelatin until well blended. Let the mixture chill in the refrigerator for 5-8 minutes.

    Set four large strawberries aside. Chop remaining berries. Stir pieces into gelatin mixture. Add 1 ½ cups of whipped topping. Whisk all ingredients until blended. Refrigerate mixture for 20 minutes.

    Once the mixture has thickened, pour into the prepared crust.

    Cover and refrigerate for at least 3 hours.

    Garnish with remaining whipped topping and strawberries.
