Served with rice, pasta or potatoes, salmon is a dish that can rarely go wrong. This fish can be spiced and marinated to taste like a million bucks, and most of the time it’s a reasonably priced option, too. This simple recipe is a zesty, tangy treat you’ll be craving when it’s gone.

Ingredients:

  • 2 salmon fillets
  • 1 Tb. olive oil
  • 1 Tb. pure maple syrup or raw honey
  • 1 large lime
  • 1 tsp. ginger, grated
  • 1 tsp. salt
  • ⅛ tsp. ground black pepper

Directions:

    In a small bowl, whisk together olive oil, maple syrup, lime juice and zest, ginger, salt and pepper. Spread ¾ of this mixture on the bottom of a baking dish or platter. Place salmon fillets skin-side down into the marinade and let sit for about 10 minutes.

    Turn the oven's broiler on high and position the top oven rack 5-6″ below the heat source. Line a large baking sheet with unbleached parchment paper, spray with cooking spray and place salmon fillets skin side down. Coat with remaining marinade.

    Broil for 12 minutes, rotating the baking sheet to ensure proper browning and prevent burning.
